Peanut Butter Oat Bites

We all need a little snack just waiting to be grabbed for when hunger strikes unexpectedly, when you are running out the door for an early morning workout class, when the kids are crying, when you need a snack to pack into your work lunch box, or when you are just feeling a little snacky. 


These peanut butter oat bites have you covered! They are made with simple, wholesome ingredients that will keep you fueled & satisfied!

WHAT'S INSIDE

CREAMY, 100% PEANUT BUTTER

Aka, the greatest stuff on Earth! The 100% creamy peanut butter is drippy, yummy goodness that adds the main flavor to these bites.


You want an unsweetened, natural peanut butter that has only 1-2 ingredients: peanuts OR peanuts & salt. Peanut butter doesn't need anything else but that. Just those 1-2 ingredients are what make the smooth, drippy peanut butter needed for my recipes!


PURE MAPLE SYRUP

To add just a touch of sweetness that these bites need! It also adds a stickiness needed to bind together with the flours.


Pure maple syrup is my go-to to sweetener for most of my recipes. I love it for it's depth of flavor and natural sweetness. Other liquid sweeteners would work here as well if you prefer. Agave would be the best substitute, although honey and date syrup would work as well! They just have a more distinct flavor and might change the overall flavor slightly.


PLAIN OAT MILK

The oat milk loosens up the wet mix to make it easier to stir and combine with the dry ingredients.


Homemade or store bought will work here! My favorite brand is Elmhurst because of the simplicity of their ingredients (just oats and water!), but go ahead and use any brand you like! Other plant or dairy milks would work here as well if you prefer!


PURE VANILLA EXTRACT

FLAVOR, FLAVOR, FLAVOR. Pure vanilla extract add the soft & subtle vanilla-y taste that takes these bites from good to GREAT.


Pure vanilla extract only, none of that imitation stuff!


ROLLED OATS, GF

They are called peanut butter oat bites for reason! The rolled oats are the bulk of the dry ingredients. Why? Because they are a good source of wholesome, complex carbohydrates and provide energy to the body and brain.


Gluten free rolled oats are not required if you aren't sensitive or allergic to gluten!


ALMOND FLOUR

The almond flour is used to bind up the bites and make them doughy, soft, and chewy.


You can substitute the almond flour for addition oat flour if you prefer. I use two types of flour here just to provide more nutritional variation.


OAT FLOUR, GF

Same as the almond flour, the oat flour helps make these bites soft and binds them together!


Both store bought or homemade work here! If you are using homemade: make sure that the oat flour was made in a high powered blender, such as a Vitamix, and that it is a fine flour texture. We don't want any grainy oat flour here, or in any recipe really.


You can substitute the oat flour for additional almond flour if you prefer. I use two types of flour here just to provide more nutritional variation.


CHOPPED DRY ROASTED PEANUTS

YES these bites have double peanut, and that's what makes them so good! Adding the chopped, dry roasted peanuts in addition to the 100% creamy peanut butter really bumps up that delicious nutty tasty, and they add a little crunch to the bites - and who doesn't love a little texture when munching??


If you purchase whole dry roasted peanuts, you can:

  • chop them on a cutting board using a knife

  • pulse them in a food processor until chopped

  • add them to a Ziploc bag, release the air, seal the bag, & use the bottom of a measuring cup to crush the peanuts

Choose dry roasted peanuts to keep these oil free!


PINK SALT

Just a little pinch of salt to compliment to sweet. You can omit this if your chopped peanuts are salted.


FAQs

CAN I USE A DIFFERENT KIND OF FLOUR?

I have only made these peanut butter oat bites using the types of flours and ratios listed in the recipe, but I don't see why you couldn't substitute the almond/oat flour for something like coconut flour or regular flour. I would steer you away from flours that have a stronger taste, such as whole wheat flour or chickpea flour.



CAN I USE A DIFFERENT NUT/SEED BUTTER?

Well... it's the peanut butter that makes these PEANUT BUTTER OAT BITES. But yes, this recipe will work with any other 100% creamy nut/seed butter of your choice. It will, of course, change the flavor of the bites.



HOW SHOULD I STORE THE BITES?

Once the bites are rolled, they should be stored in an airtight container either on the counter for 7-10 days or in the refrigerator for 2-3 weeks. The bites will harden slightly if stored in the refrigerator.


The bites can also be frozen & defrosted as needed if you want to bulk make them!

To make this recipe, you will need is:

  • Measuring cups & spoons

  • A large mixing bowl

  • A whisk

  • A rubber spatula

WHAT YOU'LL NEED

GLUTEN FREE | DAIRY FREE | OIL FREE | REFINED SUGAR FREE | VEGAN
INGREDIENTS
  • 1/2 cup of 100%, creamy peanut butter

  • 1/4 cup of pure maple syrup

  • 1/4 cup of plain oat milk, gluten free

  • 1.5 tsp of pure vanilla extract

  • 1.5 cups of rolled oats, gluten free

  • 3/4 cup of fine almond flour

  • 1/2 cup of fine oat flour, gluten free

  • 1/2 cup of chopped, dry roasted peanuts

  • 1/4 tsp of pink salt

DIRECTIONS
  1. Whisk together peanut butter, maple syrup, oat milk, and vanilla extract in a large mixing bowl.

  2. Stir in the rolled oats, almond flour, oat flour, peanuts, and pink salt using a rubber spatula. Use your hands to combine once it starts coming together. Once completely mixed, the mixture should be soft and squishy, but not sticky.

  3. Scoop out a heaping tablespoon at a time and roll into balls. Make approximately 26 bites.

  4. Store in an airtight container at room temperature for 7-10 days, or in the refrigerator for 2-3 weeks.
